Ingredients

A professional chef teaches you how to make spicy scallion mazesoba (brothless noodles) in just 10 minutes. Topped with ground pork, green onions, and an egg yolk, this satisfying dish is perfect for a quick weekend lunch or dinner. The spicy sauce, seasoned with doubanjiang (chili bean paste) and chili oil, coats the noodles beautifully, with a splash of lemon juice adding a refreshing accent. While extra-thick noodles give it an authentic touch, regular noodles work just as well. Adding a splash of the noodle cooking water to the sauce is the key to mellowing and binding the flavors together.

  • Noodle Choice
    • Extra-thick noodles are ideal, but thick or regular noodles can be used instead. Choose based on your preferred texture.
  • Noodle Doneness
    • Feel free to adjust the noodle firmness to your liking. Use the package instructions as a guide to cook them to your preferred texture.
  • Sauce Tip
    • Adding 2 tbsp of the noodle cooking water to the sauce mellows the flavor and helps it coat the noodles better.
  • Seasoning Meat
    • Seasoning the ground pork with a pinch of salt (approx. 1.5g) before stir-frying in sesame oil brings out its simple yet savory flavor.
  • Finishing Touch
    • Use only the egg yolk for the topping. Mixing everything thoroughly before eating ensures the sauce coats every bite beautifully.
  • Adjusting Heat
    • Adjust the amount of doubanjiang and chili oil to your taste. If you prefer a milder flavor, reduce or omit the doubanjiang.
