Healthy Yet Delicious! The Secret Step to Perfect Air Fryer Karaage

PR

Keeping the video in view

Ingredients

This is a healthy Air Fryer Karaage recipe. By using a coating of potato starch mixed with oil, the chicken turns out incredibly crispy even when air-fried. Most of the oil drips away during cooking, making it much lower in fat than deep-fried chicken. Key techniques include bringing the meat to room temperature and scoring the tendons for tenderness, plus adding sugar to the marinade to achieve a beautiful golden-brown color in the air fryer.

  • Prep
    • Bring the chicken thigh to room temperature before cooking. This shortens cooking time and keeps it juicy.
  • Prep
    • Thoroughly pat dry the chicken's surface with a paper towel to remove odors and ensure crispy skin.
  • Prep
    • Remove excess skin, fat, and connective tissue, and score tough tendons with the tip of a knife for a tender texture.
  • Prep
    • Cut into roughly 7 large, equal-sized pieces to prevent uneven cooking and retain juiciness.
  • Seasoning
    • Marinade with 1 tsp soy sauce and 1 tsp sugar. Sugar promotes the Maillard reaction, giving it a beautiful brown color in the air fryer.
  • Seasoning
    • Adding salt to the coating sharpens the flavor profile, making it taste richer even with less sodium.
  • Coating
    • Mix 30g potato starch, 30g oil, a pinch of salt, and pepper into a liquid batter. Pre-mixing oil prevents the starch from drying out and hardening.
  • Coating
    • Let the coated chicken sit for 5 minutes. This helps the batter adhere better so it won't peel off during cooking.
  • Cooking
    • Stretch the skin to wrap around the meat when placing it in the basket. This is key to getting the skin extra crispy.
  • Cooking
    • Do not line the basket with parchment paper or foil. It blocks air circulation and can cause malfunctions or fires.
  • Cooking
    • Air fry at 200°C (390°F) for 10 minutes. Ensure the internal temp is at least 75°C (167°F); add 2 minutes if needed.
  • Finishing
    • Let the chicken rest for 5 minutes after cooking. This stabilizes the juices and allows carryover cooking to make it juicier.
  • Health Benefit
    • About 25g of the initial 30g of oil drips to the bottom. The air fryer crisps the food with minimal oil while draining excess fat.

  14. 14

Remove from the air fryer and let it rest for 5 minutes.

Why This Dish Tastes So Good

Massaging the chicken with a soy sauce and sugar marinade increases its water-holding capacity, while the potato starch and oil coating seals in moisture, ensuring a juicy result even in an air fryer. Additionally, cooking at a high temperature of 200°C (390°F) triggers the Maillard reaction on the surface, creating a savory, aromatic flavor. Properly managing the internal temperature and letting the meat rest after cooking prevents juices from escaping, maintaining a tender texture.

Step 1: Bring the Meat to Room Temp

In this recipe, we will make incredibly crispy and juicy Karaage using an air fryer without deep-frying. As an important preparation step before cooking, remove the chicken thigh from the refrigerator and let it come to room temperature. If you start cooking while the meat is still cold, it will take longer to cook through, causing the meat to dry out. Bringing it to room temperature shortens the cooking time and locks in the moisture, keeping it juicy. We highly recommend doing this as the very first step of your prep.

The Secret Coating for Ultimate Crispiness

When making fried food in an air fryer, preparing the coating is the most crucial part. In a bowl, combine 30g of potato starch, 30g of olive oil (about 2.5 tbsp), a pinch of salt, and a generous amount of pepper, then mix well. Mixing the oil and starch beforehand to create a liquid batter helps it cling tightly to the chicken, ensuring a crispy finish in the air fryer. Additionally, seasoning the batter with a bit of salt defines the flavor profile, making it taste delicious even with less sodium.

Simple Marinade with a Touch of Sugar

The marinade massaged into the chicken is very simple. In a separate bowl, combine 1 tsp of soy sauce and 1 tsp of sugar. Since air fryers don't brown food as easily as deep-frying, adding a little sugar to the marinade adds richness and helps achieve a beautiful, appetizing golden-brown color. If you prefer a salt-based Karaage that highlights the natural flavor of the ingredients, you can substitute the soy sauce with a pinch of salt.

Prep Techniques for Better Texture

First, thoroughly pat dry the surface of one chicken thigh (approx. 350g) with a paper towel. Removing excess moisture and juices is the secret to getting the skin crispy and eliminating any gamey chicken odor. After removing excess yellow fat and connective tissue, flip the meat over and make small cuts into the tendon-heavy areas with the tip of a knife. Scoring the tendons makes the meat incredibly tender and easy to eat. Cut the chicken into slightly larger, bite-sized pieces (about 7 pieces) to lock in the juices and keep it moist.

Marinating and Coating the Chicken

Place the cut chicken into the bowl with the soy sauce and sugar marinade, and massage it thoroughly by hand. Massaging until the liquid is completely absorbed and the surface of the meat becomes slightly sticky helps break down the fibers, making the meat tender. Next, transfer the chicken to the bowl with the oil and potato starch batter, tossing to coat it completely. Let it sit for about 5 minutes to allow the coating to settle, which prevents it from peeling off during cooking.

Air Fryer Placement and Cooking Tips

Arrange the chicken pieces in the air fryer basket. The ultimate secret to crispy skin is to stretch the skin over the meat, wrapping it into a neat round shape before placing it down. We are using a large 6L air fryer today, spacing the pieces out so they do not overlap. Set the air fryer to Air Fry mode at 200°C (390°F) and cook for 10 minutes. Please note: never line the bottom of the basket with aluminum foil. This blocks air circulation and can cause accumulated oil to overheat, posing a fire hazard.

Checking Doneness and Healthy Results

After cooking for 10 minutes, insert a thermometer into the thickest piece of chicken to check if the internal temperature has reached 75°C (167°F) or higher. Since it was slightly under today, we cooked it for an additional 2 minutes. Once the Karaage is done, resist the temptation to eat it immediately and let it rest for about 5 minutes. This allows the juices to redistribute, making it even juicier. Amazingly, out of the 30g of oil we started with, about 25g dripped down to the bottom of the basket. This is the beauty of the air fryer: it uses just enough oil to get a crispy finish while letting the excess fat drain away for a healthy, delicious meal.
