Ingredients

In this video, 1-star Michelin Japanese chef Akihiko Murata introduces two dishes using seasonal horse mackerel (aji). The first dish is "Horse Mackerel Nanbanzuke." Unlike the typical style of serving it chilled, Murata's signature style is to combine freshly pan-fried hot horse mackerel with hot sweet-and-sour vinegar sauce to enjoy it warm. The second dish is a colorful "Horse Mackerel Salad" using sashimi-grade fish, combining Japanese ingredients with a Western-style dressing made of balsamic vinegar and olive oil. Both are presented as easy-to-recreate home recipes, making them the ultimate way to enjoy horse mackerel this summer.

  • Heat control
    • Coat the horse mackerel with potato starch and pan-fry in sesame oil over low heat to make the skin side beautifully crispy.
  • Seasoning (Nanban)
    • Pour the Nanban vinegar sauce over the fish and vegetables while it's still hot right after boiling to let the flavors meld in Chef Murata's signature warm style.
  • Prep (Nanban)
    • Add the cooked horse mackerel along with the oil from the pan to the bowl to infuse the Nanbanzuke with the rich aroma of sesame oil.
  • Prep (Salad)
    • After cutting the tomato into wedges, pat them dry with a paper towel to prevent excess moisture from diluting the flavor.
  • Prep (Salad)
    • Finely chop the salted kelp before mixing it with the seasonings so it distributes evenly throughout the dish.
  • Seasoning (Salad)
    • Combining wasabi and balsamic vinegar enhances the umami of the horse mackerel, creating a deep, fusion flavor.
  • Ingredients
    • Be sure to use sashimi-grade (raw-safe) horse mackerel for the salad.
