    [Prep the Vegetables] Thinly slice the cucumber using a mandoline or slicer. Trim the stems off the okra and slice them diagonally. Thinly slice the myoga. Julienne the ginger and shiso leaves. Cut the cilantro into bite-sized pieces. Bring a pot of water to a boil while prepping the vegetables.

    [Make the Dressing] In a bowl, combine the rice vinegar, soy sauce, sugar, sesame oil, and toasted sesame seeds, and mix well. Remove the pits from the umeboshi, tear them into small pieces by hand, add them to the bowl, and mix everything thoroughly.

    [Blanch the Vegetables] Add salt (1% of the water's weight) to the boiling water. Blanch the okra and cucumber separately for about 10 seconds each. Transfer them to a tray and drain the excess water thoroughly.

    [Cook the Pork] Separate the thinly sliced pork loin beforehand so the pieces don't stick together. Turn off the heat of the boiling pot, and gently cook the pork shabu-shabu style by swishing it in the hot water. Once cooked through, remove the pork, transfer it directly into the bowl with the dressing from Step 2, and toss well to coat.

    [Finish and Serve] To the bowl with the dressed pork, add the blanched and drained cucumber and okra, along with the sliced myoga, ginger, shiso, and cilantro. Toss everything together thoroughly to ensure it is well coated with the dressing, then transfer to a plate and serve.
